I recently made these for our summer camping trips, and, let me tell you, they were not only extremely convenient, they were also soooo delicious!
It got me to thinking that whipping up easy breakfast sandwiches are a perfect healthy meal prep idea for busy mornings or postpartum meal ideas (one that you can make for yourself or bring to a new mama!).

I opted to make my batch of easy breakfast sandwiches simple with an english muffing, egg, bacon, and cheese. And then we added travel size hot sauce when we enjoyed them while camping.
I also decided to be ambitious and make my english muffins from scratch, using the recipe from this book.
This obviously made them a little more of a labor of love BUT does it get any better than homemade sour dough english muffins??

Another reason why I love this recipe is you bake BOTH the eggs and bacon in the oven (did you know you can do this?!). This makes meal prepping and clean up really simple on your end!
Speaking of meal prep, this recipe is an ideal option for meal prep freezer breakfast ideas for busy work weeks or weekends. These breakfast sandwiches can last in the freezer for up to 3 months!
Ingredients for Easy Breakfast Sandwiches
To make 6 breakfast sandwiches you’ll need…
- 6 English muffins (and if you want to make them from scratch)
- 1 dozen eggs
- 3/4 cup milk
- 1 tablespoon each of salt and pepper
- 1 package of bacon
- 1 package of pre-sliced cheese (I used pepper jack, but Swiss or cheddar would be good too!)
- 6 pieces of parchment paper or tin foil
- Optional: 1 tablespoon of No Salt Seasoning or the best seasoning ever
- Optional: Hot sauce – my personal favorite (and this one is perfect for traveling, of course, but also if you’re dropping these off for a friend!)
Instructions for Easy Breakfast Sandwiches
- Bake bacon (Did you know you can do this?! This is now the only way I make bacon!)
- Preheat oven to 400 F
- Line cookie sheet with parchment paper then lay entire package of bacon on cookie sheet
- Put bacon in oven right way
- Bake for 10-15 minutes, or until bacon is at desired texture
- Prepare eggs
- Preheat oven to 350 F
- In a medium bowl, using a fork or whisk, mix 1 dozen eggs with 3/4 cup milk until well combined.
- Mix in 1 tablespoon each of salt and pepper
- Pour egg mixture in 9×13 inch baking dish
- Bake for 30-40 minutes, or until eggs are firm
- Note: If your bacon is still baking, you can put egg mixture in the oven until bacon is done, and then decrease oven temperature to 350 F
- Assemble Make Ahead Breakfast Sandwiches
- Slice english muffin in half (do not toast unless you are eating these right away!)
- Using a drinking glass or mug, cut out eggs.
- Layer egg, bacon, and cheese in between English muffin pieces.
- Wrap in parchment paper or foil and store in a gallon-size ziplock bag.
- Store in refrigerator for up to 4 days or freezer for up to 3 months
- How-to reheat breakfast sandwiches
- You have a couple of options: stove top in a skillet at medium heat or in the oven at 250 F (I like to place them in a cast iron skillet)
- If you make your own english muffins…
- Use the same glass to cut out your english muffins and eggs so everything stacks neatly.


Alternative Recipe Ideas
- Swapping out sausage breakfast patty for bacon
- Pre-cook ground sausage and add to eggs before baking
- Add mushroom, spinach, pesto, feta or goat cheese, and onion to eggs before baking
- Add bell pepper, sweet potato, and parmesan cheese to eggs before baking

- If you’re storing in the refrigerator, they will last up to 4 days.
- If you’re storing in the freezer, they will last up to 3 months.
