The other day my friend text me, “have any good lunch ideas?”. “Oh yes. I have been making this on repeat”, I responded.
I don’t know about you, but sometimes lunch becomes a forgotten meal in our household. And I don’t know why because a good lunch is *so nice* to have in the middle of the day.
What I especially love about this recipe is how fast it comes together. Plus, you can keep it in the fridge to enjoy for a few days. Not to mention it has tomato, basil, and feta which are some of the best ingredients on the planet, if you ask me!
Also, if you haven’t noticed, this easy pasta salad is also packed with protein, making it the perfect meal!
One could even argue that this would be the perfect thing to have for dinner if you’re in a pinch or you can have made ahead of time!
Also! During the summer months, this easy pasta salad recipe is perfect for making ahead of time and bringing with you on day trips to the beach or for camping.
Okay, here she is!
Ingredients for Easy Pasta Salad
- 1 box rotini noodles (I prefer Banza brand)
- 1 small container of cherry tomatoes
- 2 pouches of tuna
- 6 ounces of feta
- 1/2 cup parmesan cheese
- 1 bunch of basil
- Salt and pepper
- Olive oil
Instructions for Easy Pasta Salad
- Prepare noodles. Once noodles are just cooked, rinse with cold water. Transfer noodles to large mixing bowl or container, and drizzle with 3 tablespoons olive oil.
- While noodles are cooking, quarter cherry tomatoes, and chop basil into fine pieces or chunks, whichever you prefer!
- Combine tomatoes, feta, parmesan, and tuna (don’t forget to drain water from pouch).
- Add 2 teaspoons each of salt and pepper and basil. Combine.
- Dish up and enjoy!
- Note: If you find your pasta salad is on the dry side, add a little bit more olive oil.
